OLD FASHIONED CHICKEN SOUP FROM SCRATCH , 0 Comments

This recipe is the most wholesome, delicious chicken soup you’ve ever tasted. Feel free to add your favorite veggies, herbs, to create your own experience. I use a whole Chicken, adding a dash of raw apple cider vinegar to break down the collagen and draw nutritious minerals out of the bones. You'll have the entire benefit of the chicken, instead of just the protein. Traditional Chinese Medicine experts swear by this for a collagen boosting, mineral rich broth. You will need a very large saucepan with a lid - or better yet, a crock pot!
- -A whole Chicken
- -Cluster of garlic
- -2 onions- more or less
- -5 carrots- more or less
- -3 sticks of celery
- -1 cup of red rice* optional
- -2 tbsp raw apple cider vinegar
- -Your choice of herbs. I like rosemary, coriander, lemongrass, tarragon, bay leaves, and sage.
Directions: Remove the skin of the chicken. You can do this using a dry kitchen towel. You simply use the towel to grip the chicken's skin and pull. Of course, you'll then have to discard the towel, which is the drawback of this method.
Place chicken in pot and fully cover the chicken with purified water, add the raw apple cider vinegar and bring to simmer with the lid on.
Simmer until the chicken is falling off the bone, 1-4 hours. Crock pots can stay on over night on low. The longer it cooks, the more flavorful and nutritious. Remove from heat. When cool enough to handle, remove chicken pieces from the soup. Using your hands or a fork and knife, tear the meat from the bones. Discard bones and add meat back to the soup. Add the vegetables (and rice, if you desire) and simmer on low for about 30 minutes. After the vegetables are cooked, it's ready to enjoy! This recipe is great, because you can just throw everything in without worrying about minutely detailed measurements. The more variety you add, the more delicious, and it is super healthy and nutritious.
