A Caramel Slice of Heaven , 1 Comment

When your sweet tooth kicks in, it's hard to deny it. Instead of opting for something that's laden with processed sugar, opt for this scrumptious recipe from Charlotte Rowley (and stay tuned for our interview with her)!
Base
1 cup oats, 
1/4 cup ground almonds
1/4 cup desiccated coconut
1 tbsp coconut oil
2 tbsp water 
Blend until sticky. Press into the bottom of a tin. A 6-inch springform works well, but anything is fine. 
 
Caramel 
8 medjool dates (regular dates just aren't sticky enough) 
1/3 cup almond butter 
2 tsp vanilla extract 
1 tbsp maple syrup
Blend until smooth. Just like magic, it turns into caramel! Spoon on top of base. 
Chocolate 
2 tbsp coconut oil
2 tbsp maple syrup
2 tbsp raw cacao powder 
Melt together and stir until smooth. Pour over base, and chill in the fridge for around 20 minutes to set. Alternatively, you can just melt some good quality dark chocolate (note - no refined sugar!) to pour on top.
